Summer Salad

Yummy Summer Salads! I don’t have any store bought salad dressings at home. I love winging them. So I thought I’d share a couple with you.

My Personal Favourite

2 cups Olive Oil
1 tsp Sesame Seed Oil
1 cup Rice Vinegar
1/2 cup Apple Cider Vinegar
A chunk of fresh ginger, peeled, at least the size of your thumb (I like lots!)
Zest of a whole lime (squeeze it after into dressing, & use less vinegar)
A big heaping spoon of honey (just depends how sweet you want it)
Optional: 2 heaping tbsp of organic virgin coconut milk and/or handful of fresh cilantro

Mix in blender or hand blender. Store unused portion in fridge.

I add pine nuts, goat cheese or feta, and slices of avocado to my salad.

Kid’s Favourite

Olive Oil
Apple Cider Vinegar
Balsamic Vinegar
Some Honey
Clove of Garlic

Blend (hand blender that can breakdown the clove of garlic)

I don’t measure anything, so all measurements are just approximate. Just have fun! Start with a little, you can always add more!
